Alternatives to rice wine
The best alternatives include rice saki, miran, Shaoxing rice wine, pale sherry wine and white rice wine.

When looking to replace the sake, a Japanese variety of rice wine, use dry sherry and white wine in equal quantities.
Mirin
To replace the mirin, mix one sugar with 6 parts of dry sherry, dry white wine or sweet Marsala wine.
Shaoxing rice wine
If the recipe calls for Shaoxing rice wine, use pale dry sherry (do not cook sherry!).
White rice wine
